Cormac have you though of using the American Beer Keg Pump system to dispense. It would be great for parties an such and no need for expensive equipment.

Just place the keg in a ice bath to cool

I was looking at that myself earlier today. If it works why does any homebrewer bother with the whole gas setup?

Yeah, you've got to run through the whole keg in 3 days, tops, in my experience - which isn't usually a problem in the kind of places you see those pumps.

Also wouldn't solve the OP's need for natural fermentation, unless it was used with key kegs (which Vanguard does.)
