Extremely bad smell from latest extract

If you have graduated (or would like to graduate) from the beer kit to malt extract, hops, steeping grains, etc. Then this is the forum for you.

Extremely bad smell from latest extract

Post by Des » Tue May 21, 2013 3:07 pm

Did an extract at the weekend, Saturday

500g crystal
1.5kg Light DME
1.5kg Medium DME
20g fuggles @ 60, 45
20g challanger @ 30, 0

After a day in the FV, there is a really bad smell coming from it, like nothing I ever experienced before. The room it's in needs the window constantly open, or else the smell is taking over the house. Wife is not happy, neither am I.

Previous extract didn't cause this smell.

Is/Could it be infected - fermentation took off pretty well, and there is still a rather large head of foam on it.

One thing, the final addition of hope was left in for 24 hours, by mistake.

Are you able to take a photo of it and do you have any idea what temperature it is at the moment?

It's not eggy, or sulfur.

It's not really acid either, like vinegar or lemon juice, no.

I don't know how to describe it.

Extremely bad smell from latest extract

I've never used it but I do remember 1 brew I did which smelled like a fart from the fermenter. I wouldn't be overly worried if I was you. See how it pans out. The pic I saw you uploaded looked like nothing other than krausen to me. I would maybe try and reduce temp to high teens

I just read that post to my wife, and she's said "that's exactly what it smells like". :P

Hey Des,
I had a pretty stinky Weiss which I was going to dump.
It turned out a winner.
It could be all the badness escaping in gas form to make for your best brew ever!
Patience. Don't sweat it.

Looks totally normal and sulphur isn't necessarily a bad sign.

Ah there's no chance of it being dumped I don't think.

We will definitely bottle it, and then drink it - if it's undrinkable at the time, then it will be thrown out - but if there's mistakes in it, we want to know - all part of the learning curve.

It was our second extract, and we bottled the first one same day, initial tasting out of the FV were positive, so we'll see where it goes.

Thanks for the advice lads, I think the stink has subsided somewhat today anyway.

Bit of time heals all. Off smells die down with time and will probably be gone by bottling time.

Sulphur/fart smell is grand, though I usually only get it with a Belgian type yeast.
