Keep adding more hops for one thing.
Chris uses first wort hopping. You basically put some of your bittering hops in the wort that comes from the mash tun before you start boiling. Typically you add 10% IBU to account for this if you brewing software doesn't do it or you do recipes by hand.
ok, thanks, I'm not sure my SW does do that but I'll check it out when I get home. Have to go get some NZ hops now!
I use Brewtarget software for now and i'm not sure how it measures IBUs as an overall % or how you add 10% before the boil. Is that 10% of my overall target IBU?
